White teas are rare, with the leaves being picked and harvested before they have fully opened, when the buds are still covered by fine white hair. White tea is similar to green tea in that it has similar health benefits and it has undergone very little processing and no fermentation, however there is a noticeable difference in taste (white tea has a more delicate flavour) and colour.
